Here are some terms used in the decoration process of cake which we need to know:
Almond Icing
Is another name for marzipan.
Apricot Glaze:
Is brushed over cake to act as a glue before they are covered with marzipan. Its is made by boiling apricot jam and water together until blended,then sieving to remove any lumps.The jam must be boiled to prevent any risk of mould forming between the marzipan and the cake.Apricot jam is used because it flavor complements the marzipan. Cheaper.Cheaper jams, which contains less fruit,are more suitable for making glaze.
Ball Tool:
It is a rounded tool used to gently curve and shape the edges of a sugar flower petal or other decoration.
Bass Relief Paste:
It is another modelling paste
Basket Weave:
It's a piping technique which requires a special basket weave tube.
Blossom Tint
Another name for petal dust,powder dust or dusting powder.
Bridge Work:
It is the basis for royal icing extension work and supports the lines of royal icing,keeping them away from the cakes.Its is the overpiped scalloping that lies under the vertically piped lines.
