COCONUT CAKE RECIPES
Butter :220 g
Sugar :330 g
Coconut Essence :1 teaspoon
Eggs :3 eggs
Desiccated Coconut :130 g
Baking Powder :limited quantity
Milk :360 ml
Baking time :2 hrs

- Preheat the oven to 180 C(350 F/GAS 4).Lightly grease the tin and the base with non-stick baking powder.Now beat the butter,sugar and coconut essence until light and fluffy. Add eggs one at a time,beating well after each addition.Transfer to large bowl and fold in combined coconut and sifted flour alternatively with spoonful of milk.
- Spoon the mixture into the tin and smooth the surface.Bake for the time stated above.Using the table as a guide ,test the cake towards the end of the cooking time.A skewer inserted into the center of the cake should come out clean.Leave the cake in the tin for at least 5 mins before turning out to cool.
